This is the time of year when the thistle is in full flourish. This makes excellent 'pretend' asparagus. Too prepare; take a young stem, strip off all the leaves etc, peel as with a potato (potato peeler is goof for this Too cook; drop in boiling water for 4 -5 minutes drain then fry in butter/oil Great with fried nettle & dandelion leaves
